Over 8 to 12 years, our agave matures, drawing deep into the rich terroir of the Karoo, developing a unique and complex flavor profile. Harvested at its peak, this agave yields a spirit with a naturally smooth, sweet, and subtly herbaceous character – the very foundation of Animo’s bold yet refined spirit. BLANCO
The Pure expression
A Blanco agave spirit, also known as Silver or Plata, is the purest expression of the agave plant. It is either unaged or rested for a very short period (typically less than two months) in stainless steel or neutral oak barrels. This allows the fresh, crisp flavors of the agave to shine through, often revealing notes of bright citrus, a hint of pepper, and the natural sweetness inherent in the plant.
Reposado
Rested to Perfection
Reposado, meaning “rested,” is an agave spirit that undergoes a minimum of two months of aging in oak barrels. This resting period allows the spirit to develop a smoother, more balanced character. The oak imparts subtle notes of vanilla, caramel, and light spice, while still preserving the bright essence of the agave.
